Sweet Potatoes
If I had to pick a favorite Thanksgiving/Christmas food, I think I would pick Sweet Potatoes (or Yams). My Grandma made the BEST sweet potatoes/yams in the world. It took me a while to perfect her recipe, but I think I have it now. Don’t expect this to be a “diet” food. With nearly a cup of brown sugar and a half a cup of butter it is rich, but hey! The holiday season only happens once a year, and these babies are so worth it!
NOTE: I have used both sweet potatoes (lighter, more yellow flesh) and yams (orange flesh) in this dish. They work about the same.
Ingredients:
-7-8 sweet potatoes or yams
-3/4 cup light brown sugar
-1/2 cup butter (NO MARGARINE!)
-1 package of large marshmallows
Directions:
1.) Thoroughly wash all of the sweet potatoes/yams.
2.) Cut the ends off of the sweet potatoes/yams. Then cut the sweet potatoes into chunks.
3.) Place the chunks of potatoes/yams into a large pot full of water.
4.) Boil the sweet potatoes/yams for 25-30 minutes (until a fork inserted into the largest chunks easily goes into the potato.
5.) Drain the water from the sweet potatoes/yams.
5.) Carefully peel the skin off of the sweet potatoes/yams.
6.) Cut the sweet potatoes/yams into 3-4″ chunks.
7.) Place the chunks of potatoes/yams into an oven-safe dish.
8.) Preheat the oven to 350* Fahrenheit.
9.) Once there are half of the sweet potatoes in the dish, cut half of the butter into small chunks and evenly place them over the potatoes in the dish.
10.) Sprinkle half of the brown sugar over the potatoes in the dish.
11.) Put the remaining sweet potatoes/yams into the dish.
12.) Chunk up and evenly place the remaining butter over the sweet potatoes.
13.) Sprinkle the remaining brown sugar over the top of the sweet potatoes.
14.) Cover the dish and potatoes with aluminum foil.
15.) Place the dish in the oven and bake for 30 minutes.
16.) Before removing the sweet potatoes from the oven, evenly place the marshmallows over the top of the potatoes.
17.) Bake for 5 more minutes.
18.) Remove the dish from the oven and enjoy!

5.) Step Five: Drain the water from the potatoes.
6.) Step Six: Peel the potatoes.
7.) Step Seven: Cut the potatoes into 3″-4″ chunks. Place the chunks in a oven-safe dish.
8.) Step Eight: Preheat the oven to 350* Fahrenheit.
9.) Step Nine: Once the dish is half-full, cut half of the butter into small chunks. Place the chunks evenly over the potatoes in the dish.
10.) Step Ten: Sprinkle half of the brown sugar over the potatoes in the dish.
11.) Step Eleven: Put the remaining potato chunks into the dish.
12.) Step Twelve: Chunk up the remaining butter and place it evenly on the potatoes.
13.) Step Thirteen: Sprinkle the remaining brown sugar over the potatoes.
14.) Step Fourteen: Cover the dish with aluminum foil and bake for 30 minutes.
15.) Step Fifteen: Before removing the dish from the oven, place the marshmallows evenly over the top of the potatoes.
16.) Step Sixteen: Bake for 5 more minutes.
17.) Step Seventeen: Remove from oven and enjoy!
